Low Fat Recipe for People with a Sweet Tooth

What is the first thought that crosses your mind when you pass by a bakery. ‘Yummyyyyyyy' isn't it? No doubt then that your mouth starts watering at the sight of delicious breads garnished with tasty nuts, olives, honey or whatever you love to gorge on. But alas! All your wonderful thoughts of food have to be pushed aside the moment you think of your weight loss goals. Don't worry, you are not alone. Also, you do not need to curb all your desires for good food. You can learn some low-calorie recipes of weight loss breads. Such breads are not easily available at traditional bakeries.

Cranberry Eggnog Quick Bread

Ingredients

Egg: 1 Egg substitute: 1/4 cup White sugar (Splenda® is a better alternative): 1 cup Light eggnog (from carton), if soy eggnog is not available, it can be substituted: 1 cup Canola oil: 1/4 cup Rum: 1/4 cup Vanilla extract: 2 teaspoons All-purpose flour: 2 1/4 cups Baking powder: 2 teaspoons Ground nutmeg: 1/4 teaspoon Salt: 1/2 teaspoon Fresh cranberries: 1 cup

Preparation

Preheat the oven to about 3500F. Spray canola oil in leaf pans. Take a large bowl and mix egg and egg substitute in it. Add sugar, rum, vanilla, eggnog and canola oil and beat the mixture. Take flour and mix salt, nutmeg and baking powder in it. Add dry ingredients to the eggnog blend and mix on low so that the ingredients get moistened. Add cranberries smoothly. Pour the mixture into a prepared pan. Keep baking until the fork pricked in the center gets out nicely. Cool the loaf completely. Cover it firmly and refrigerate it.

Yield

You can cut it into around 20 servings or make one 9x5-inch loaf, two 8x3 3/4-inch loaves and three 5 3/4x 3 1/4-inch loaves.

These loaves freeze really well and the taste of this bread improves the next day. This bread also makes a fantastic gift, especially for the holiday season. Its color and flavor are sure to make everyone smack their lips.
