Yummy Fudge Recipes for Peanut Butter Fudge with Walnuts and Buttermilk Fudge with Pecans

Homemade fudge is one of the great indulgences of life.  And don't be fooled into thinking you can't make good fudge.  Copper kettles, etc are not necessary for a good batch of fudge.  You can do it, right in your own kitchen, with the tools you have on hand.  Here are a couple of good fudge recipes to show you just how easy it can be.  Peanut Butter Fudge with Walnuts or pecans, if you prefer, or the old fashion Buttermilk Fudge  is easy to make and is a real treat.  Note:  One of the keys to make good, creamy fudge is to beat the mixture as the directions state.  You need to beat until your arm is so tired but the fudge is stiff and creamy.

PEANUT BUTTER FUDGE WITH WALNUTS

2 cups sugar
1/2 cup milk
4 tbsp peanut butter
1 tsp butter
2 tbsp dark corn syrup
1 tsp vanilla
1/2 cup finely chopped walnuts

Mix the sugar, milk, peanut butter, butter, and corn syrup together in a large saucepan. Stir over low heat until mixture slowly comes to a boil. Boil until mixture forms a soft ball in cold water. Remove from the heat and beat until thick and creamy. Add vanilla and nuts. Beat until the fudge looks dull. Pour into a well buttered pan. Cut into squares when cooled.

Old Fashion Buttermilk Fudge

3 cups sugar
1 1/2 cups fresh buttermilk
1 tsp baking soda
1/2 cup butter
1/2 cup chopped pecans

Mix soda into the buttermilk and let stand for 3 minutes. Cook all ingredients together to the soft ball stage. Cool slightly, add nuts and beat until creamy. Spread into a dish or pan that has been sprayed with nonstick spray. Allow to cool and cut into squares.
