First you want to melt 2-3 tablespoons butter in a saucepan, and then add the following whole spices: ¾ teaspoon cumin seed, 9 whole cloves, 8-9 whole black peppercorns, 5 whole cardamom seeds, 3 Indian bay leaves, and 3 inches cinnamon stick, broken.

Once you have mixed this in you want to add and sauté 3 medium onions under transparent. Next you add 1 ½ cup uncooked basmati or other long grain rice, 1 teaspoon salt, and 3 cups of water. You want to bring this mixture to a boil and then cover and simmer on low heat for about a half hour. Once the water has been absorbed and the rice is soft you can add a pinch of saffron, a pinch of turmeric, fresh coriander leave, and cooked peas for extra color and flavor.
